Faviken

The restaurant world is abuzz with this remote wonder in Northern Sweden, Fäviken, a 12 seat restaurant on a 20,000 acre hunting reserve, whose ethos is about sourcing and cooking all ingredients locally. Chef Magnus Nilsson has a cookbook out (look inside it here), with a wonderful cover (anyone know who illustrated it? Phaidon doesn’t want to tell me)…

Faviken was listed as one of the World’s 50 Best Restaurants in 2011, ranking at 34th, with The Wall Street Journal listing Nilsson as one of the top 10 chefs of Europe in 2010 and it picks up yet more kudos as being one of Europe’s most remote foodie destinations…
